Ingredients
- 1 cup Toor dal
- 1/2 cup fine diced carrots
- 1 cup beets diced fine
- 3 cups water
- 1 tablespoon fresh ginger
- 1 teaspoon salt
- 1 tablespoon turmeric or 1 teaspoon fresh turmeric dice fine
- 1/8 teaspoon black pepper
Chank
- 1 teaspoon cumin seeds
- 1 teaspoon mustard seeds
- 1 medium diced fine onions
- 3 cloves garlic
- 1 medium diced tomatoes
- 7 leaves curry leaves
- 1/4 tablespoon ghee
Garnish
- 10 sprigs fresh cilantro
- 1 oz coconut flakes
Instructions
Wash Lentils.
Add water, carrots, beets and lentils to pan.
Turn heat to high.
Add diced fresh ginger and turmeric.
When mixture boils turn down heat and let simmer for 30 minutes.
Make Chunk- In separate pan sauté in ghee on a high flame cumin seeds, onions, garlic, tomatoes and 7 curry leaves. Cook until golden brown. Add mixture to lentils. Add salt and black pepper to taste. Garnish with fresh coriander and coconut flakes.
