Indian potato sandwich

Ingredients
- 2 medium potatoes
- 2 cloves garlic
- 12 oz french bread
- 1 cup peas
- 1 teaspoon turmeric
- 1 teaspoon garam masala
- 1 teaspoon cumin seeds
- 1teaspoon mustard seeds
- 2 tablespoons diced fine shallots
- 1 whole red chili pepper
- 1/4 tablespoon ghee
- salt to taste
- 1/8 teaspoon pepper
- 5 sprigs fresh cilantro
Instructions
Peel potatoes. Dice and add to boiling water. Cook for 10 minutes.
While potatoes are cooking heat up skillet. Add your ghee. When ghee is hot add your mustard and cumin seeds. When the seeds begin to pop add your shallots, red chili pepper and garlic. Cook for a few minutes and then add your peas. Take skillet off burner and place lid on skillet. Add salt and pepper to taste.
When potatoes are done drain and place them back into the pot. Mash potatoes with a potato masher. Pour in 1/4 cup milk, 2 teaspoons ghee and continue mashing until you have the consistency of mashed potatoes. Add garam masala and turmeric. Cook for another minute and take off stove. Add salt and pepper to taste. Add fresh cilantro.
Put mixture on sandwich bread. Put in sandwich maker and cook until sandwich is crispy.
