Vietnamese lettuce wraps with chicken

Ingredients

  • 2 leaf Boston lettuce
  • 1 teaspoon olive oil
  • 1/4 teaspoon balsamic vinegar
  • 1 tablespoon fresh diced fine fresh mint
  • 10 sprigs fresh cilantro
For Vietnamese Roasted Chicken
  • 1 tablespoon tamari
  • 1/4 cup water
  • 1 teaspoon coconut oil
  • 1 whole Thai chile pepper
  • 2 breast chicken breast
  • 1 teaspoon cumin seeds toasted
  • 1/4 teaspoon 5 star anise
  • 3 cloves garlic  diced fine
  • 2 tablespoons shallots diced fine
  • 1 teaspoon brown sugar or palm sugar
  • 1/2 tablespoon fish sauce
  • 1 dash salt 
  • 1 teaspoon white pepper

Instructions

Make Vietnamese Roasted chicken
Preheat oven to 425
 
Heat up skillet. When skillet is hot add the coconut oil. Sauté the cumin seeds, garlic, Thai red chili pepper and the shallots. Add the palm sugar, tamari and fish sauce. Add 1/4 cup water.
 
Add the chicken breasts and saute on both sides. Put in oven and cook for around 30 minutes or until chicken is done.

Cut up chicken breasts into bite  pieces. Add fresh mint and fresh cilantro.
Arrange 6 Boston lettuce leaves on serving plate. On each leaf plate a spoon full of chicken mixture. Add a drizzle of olive oil and balsamic vinegar. Serve.

I first had these lettuce wraps in a Vietnamese restaurant in Del Mar California around 25 years ago.
