Ingredients

  • 1 tablespoon coconut oil
  • 1 medium onion diced
  • 3 cloves garlic
  • 1 teaspoon fresh ginger
  • 5 cups chicken stock
  • 1 teaspoon brown sugar or palm sugar
  • 1/8 cup  tamarind
  • 3 teaspoons sriracha hot chili sauce
  • 1 tablespoon fish sauce
  • 1 cup diced pineapple
  • 1/2 cup diced plum tomato
  • 10 large cooked shrimp
Garnish
  • 1 cup mung beans
  • 1 whole fresh lime juice
  • 1 tablespoon diced fresh mint
  • 4 tablespoons diced fresh basil
  • 5 sprigs cilantro diced
  • 1 medium diced scallions
 

Instructions

Heat up soup pot. Add the coconut oil. When oil is hot add the onion, garlic and ginger. Sauté until golden brown. Add your stock, palm sugar, tamarind paste,
Vietnamese Chili Garlic Sauce, fish sauce, pineapple, shrimp, and plum tomatoes. Simmer for 20 minutes.  
 
Place in bowls, add garnish and juice of 1/2 lime over soup for each serving.
