Stuffed tofu and brown rice

Ingredients

  • 1 cube hard tofu
  • 1 tablespoon diced fine shallot
  • 5 leaves diced fine fresh Basil
  • 4 leaves diced fine mint
  • 1 tablespoon peanut butter
  • 1 tablespoon sambal oelek(chili paste)
  • 1 tablespoon  yellow curry paste
  • 1 tablespoon olive oil
  • 2 cups water
  • 1 cup brown rice

Instructions

 
Rinse the brown rice. Add 2 cups of water to pan. Bring to a boil and add the brown rice. Turn down heat and simmer for 30 minutes.
 
In the meantime cut the tofu cube half. With a knife cut an x in each half of the tofu but don ’t cut all the way through so you can stuff the tofu.
 
In a bowl mix the shallot, basil leaves, fresh mint, peanut butter and Vietnamese Chili Garlic Sauce. Mix into you have a paste.
 
In another bowl mix the olive oil and yellow curry paste. Mix well.
 
Stuff the tofu with the peanut butter sauce. Be careful not to tear the tofu when stuffing.
 
With a pastry brush add the yellow curry mixture to all sides of the tofu except for the bottom.
 
Place in oven and broil for 10 to 15 minutes until tofu is cooked.
 
Place brown rice on serving plate. Place the tofu in the center of the dish.

My Vietnamese friend Nhan told me about this dish. It is quite exotic. I had this for lunch today and it is by far one of my favorite tofu dishes.
