Ingredients

  • 4 oz  rice noodles
  • 2 teaspoons turmeric
  • 1 teaspoon coconut oil
  • 1/2 medium onion diced
  • 1 teaspoon diced fine ginger
  • 2 cloves garlic diced
  • 1 cup Broccoli diced
  • 1/4 teaspoon 5 star anise
  • 1 dash salt
  • 1/4 teaspoon white pepper
  • 1 tablespoon sambal oelek(chili paste)  
  • 1 teaspoon tamari
Garnish
  • 5 leaves fresh mint
  • 1 tablespoon fresh basil
  • 10 sprigs fresh cilantro diced fine
  • 1/4 cup bean sprouts
  • 1 whole fresh lime juice

Instructions

Boil water in pot. Add rice noodles and turmeric. Cook until noodles are done. Usually around 5 minutes.
Heat up skillet. Add coconut oil. When oil is hot add the onions, garlic and fresh ginger. Sauté for a few minutes. Add your broccoli. Sauté for a few minutes. Add 1/2 cup water, the spices, chili paste and tamari.
When noodles are done drain and add them to skillet. Stir and cook for a few minutes.
Place on serving tray. Add the garnishes on top of the noodles.
 

Comments

This is a great Vietnamese noodles dish. The tumeric turns the noodles a bright color.
