Fire roasted tomatao Pesto Pasta

Ingredients

  • 8 oz  spinach pasta
  • 1 cup fire-tomatoes
  • 16 tablespoons pesto sauce
  • 1/2 cup parmesan cheese
  • dash of salt

Instructions

 
Put tomatoes in blender. Blend. Add sprinkle of olive oil. Add pesto sauce. Blend.
Heat up sauce until it boils and then let it simmer for 15 minutes. Add pinch of salt.
Cook pasta. Put pasta on serving plate and then put the sauce on top.
 Grate fresh parmesan cheese over pasta.

This dish is super simple and easy to make. I love it. When I lived in Miami Beach I first made this recipe. This was in the eighties.
