Ingredients

  • 16 oz  top sirloin steak
  • 2 cups coconut milk
  • 2 tablespoons sambal oelek(chili paste)
  • 3 cloves garlic
  • 1 medium onion
  • 1 tablespoon ginger
  • 3 teaspoons galangal root
  • 7 leaves kaffir lime leaves
  • 1 tablespoon turmeric or 3 turmeric leaves
  • 1 tablespoon fresh Lemon grass

Instructions

Put garlic, onion, ginger, galangal, lime leaves, turmeric and lemon grass in food processor. Pulse until mixture is smooth.
Heat up skillet. When skillet is hot add the coconut oil. Add the spice mixture when the oil is hot. Sauté for 3 to 4 minutes. Do not burn the spice mixture.
In crock pot add the coconut milk, spice mixture and the cubed beef. Simmer on low for 24 hours.
At this point the beef and sauce will be black in color. Place a bowl under a colander and strain the mixture. The beef will be in the colander and the sauce is in the bowl. You may use the sauce for adding over steamed rice.
