Ingredients

  • 1 cup tempeh
  • 2 cups sliced thin Sweet potato
  • 1 cup diced green peppers
  • 1 teaspoon olive oil
  • 1 teaspoon coconut oil
  • dash of salt
  • 1 cup coconut milk
  • 3 teaspoons peanut sauce
  • 1 tablespoon sambal oelek(chili paste)
  • 1 teaspoon palm sugar
  • 1 teaspoon tamari


Instructions

Preheat oven to 425
Place sweet potatoes, green peppers, salt and olive oil in bowl. Mix well. Place on cookie sheet. Bake for 20 to 25 minutes.
Heat up skillet. Add coconut oil. When oil is done add the cubed tempeh and sauté for a few minutes. Add your vegetables, peanut paste, chili paste, tamari, palm sugar and coconut milk. Simmer for 5 minutes.
