Chayote squash subji

Ingredients
- 2 cups chayote
- 1 teaspoon mustard seeds
- 5 leaves curry leaves
- 1 medium diced fine onion
- 1 medium diced tomato
- 1/3 tablespoon urad dahl
- 1 teaspoon turmeric
- 1 teaspoon coriander powder
- 1/4 teaspoon cayenne
- salt to taste
- 1 tablespoon coconut oil
Instructions
Wash and peel skins off chayote squash. Heat up skillet. When skillet is hot add the coconut oil. When oil is hot add the mustard seeds, curry leaves, urad dahl. When seeds start to pop add the onions and sauté until they are golden brown. Add the turmeric, coriander powder and cayenne. Sauté for a few minutes. Add the squash and 1/2 cup water. Simmer until the squash is done. It takes around 10 to 15 minutes. Add salt to taste.
