Ingredients
- 4 small potatoes
- 1 cup snap Beans
- 3 teaspoons peanut sauce
- 1/2 cup coconut milk
- 6 leaf boston lettuce
- 1 cup tempeh
- 1/2 tablespoon Kecap Manis
- 4 medium eggs diced
- 1/4 cup spanish peanuts
- 1/2 cup cucumber cut in slices
Indonesian peanut sauce - Spices to put in food processor
- 5 tablespoons shallots
- 2 cloves garlic
- 1/4 cup Peppers, hot chile, sun-dried
- 1 tablespoon fresh ginger
- 1/4 teaspoon star anise
- 2 whole candlenut
- 1 teaspoon cinnamon
- 1 teaspoon coriander powder
- 3 teaspoons palm sugar
- 1/8 cup tamarinds
- 5 leaves kaffir lime leaves
- 5 leaves salam leaves
- 1 tablespoon galangal
- 1/4 cup Lemon grass
- 1/4 teaspoon nutmeg
- 1 teaspoon cardamom powder
- 1/4 teaspoon fennel seed
- 2 tablespoon coconut oil
- 1 can coconut milk
- 1 cup roasted spanish peanuts
Instructions
Boil potatoes and string beans for 10 minutes. Drain and let them cool.
Boil eggs for 10 minutes. Let them cool and then peel the eggs and diced them.
Sauté tempeh in olive oil until they are crispy. When done take off burner and place tempeh on plate.
Use the same pan you did for the tempeh. Place 1 teaspoon coconut oil in pan. When pan is hot add the Indonesian peanut sauce. Sauté for a few minutes. Add the coconut milk and stir until you have a sauce.
In salad bowl add all ingredients and toss until everything is mixed together.
Indonesian peanut sauce
Preheat oven to 425.
Add your Spanish peanuts to cooking dish and add a little olive oil and mix well. Place in oven a cook for 6 minutes. Take out of oven and let it cool.
Put all spices in food processor and pulse until everything is smooth. Heat up skillet. Add the coconut oil. Sauté for around 5 minutes or so. Stir constantly. Add the coconut milk and simmer for another 5 minutes.
Place the peanuts in food processor and pulse until peanuts becomes like a powder. Add peanut mixture to the sauce. Stir.

This is an American version of the classic Gado Gado salad. It’s a great salad to have. It is high in protein.
