Ingredients

  • 1 tablespoon coconut oil
  • 2 cups poha (flattened rice)
  • 1 teaspoon mustard seed
  • 6 leaves curry leaves
  • 1 whole green chili pepper
  • 1 medium onion
  • 1 medium potato
  • 1/4 cup Spanish peanuts
  • 1 tablespoon turmeric
  • 1/2 whole fresh lime juice
  • dash of salt
  • 10 sprigs fresh cilantro  

Instructions

Rinse poha in colander for 1 minute. Set aside colander.
 
Boil water in pan and add potatoes. Cook for around 7 to 10 minutes or until potatoes are tender.
 
Heat up skillet. When skillet is hot add the coconut oil. When oil is hot add the mustard seeds, curry leaves, and onions. Sauté until onions are golden brown.
Add the potatoes, peanuts and turmeric. Sauté for a few minutes. Add the poha and sauté for a few minutes. Add salt and the lime juice. Garnish with fresh coriander
