Cauliflower soup with coconut milk

Ingredients

  • 1 head diced fine cauliflower
  • 1 teaspoon cumin seeds
  • 1 tablespoon kecap manis
  • 1 large diced onion
  • 3 cloves garlic diced
  • 2 cups chicken broth
  • 2 cups coconut milk
  • 1/4 cup walnuts
  • salt to taste
  • 1/8 teaspoon paprika
  • 1 medium onion chopped

Instructions

Heat up skillet. When skillet is hot add coconut oil. When oil is hot add the cumin seeds. When seeds pop add the garlic and onions. Sauté until they are golden brown. Add cauliflower. Sauté until cauliflower is golden brown. 
 
Add broth to pan. Add cauliflower, garlic and onion to broth.
 
Using the same skillet add the walnuts and sauté for 1 minute.
 
Bring to boil and simmer for 5 minutes. Add mixture to blender.
Add coconut milk and walnuts. Blend until smooth.
Put back into pot. Add salt and paprika.
