Red pepper sandwich

Ingredients
- 2 roll Rolls, french
- 1 large red pepper cut in slices
- 2 tablespoon mayonnaise
- 1/2 whole fresh lemon juice
- 1/3 tablespoon sambal oelek(chili paste)
- 4 slices mozzarella Cheese
- 4 leaves fresh mint
Instructions
Preheat oven to broil
Place red peppers on cookie sheet. Sprinkle olive oil on top of peppers. Bake for 20 minutes.
Place in paper bag when done. Let them steam in the bag for around 10 minutes. Peel the skins off the peppers.
Slice sandwich rolls in half.
In bowl combine mayonnaise, chili paste and lemon juice. Stir.
With a knife spread mayonnaise mixture on bread. Add the roasted red peppers, mozzarella and fresh mint leaves.
Put in sandwich maker for a few minutes until cheese is melted.

This is a great sandwich to make for a quick dinner.
