Ingredients

  • 2 roll Rolls, french
  • 1 cup eggplant
  • 2 tablespoon  mayonnaise
  • 1/4 cup fresh lemon juice
  • 1/4 tablespoon sambal oelek(chili paste)
  • 4 slice Cheese, mozzarella, low sodium
  • 4 leaves fresh mint

Instructions

Preheat oven to broil
Place eggplant on cookie sheet. Sprinkle olive oil on top of peppers. Bake for 20 minutes.
Slice sandwich rolls in half.
In bowl combine mayonnaise, chili paste and lemon juice. Stir.
With a knife spread mayonnaise on bread. Add the roasted eggplant, mozzarella and fresh mint leaves.
Put in sandwich maker for a few minutes until cheese is melted.
