Pearl barley with eggplant

Ingredients
- 1 cup pearled Barley
- 2 cups water
- 3 cups diced eggplant
- 1 medium corn on the cob
- 1 tablespoon coconut oil
- 5 leaves curry leaves
- 1 teaspoon mustard seeds
- 1 teaspoon cumin seeds
- 1/2 medium onion diced fine
- 3 cloves garlic diced fine
- 1 teaspoon fresh ginger diced fine
- 1 whole jalapeno Pepper diced fine
- 1 teaspoon turmeric
- 1 teaspoon coriander powder
- 1 teaspoon cumin powder
Instructions
Heat up pot with water. When water boils add the pearl barley and cook until done. I use quick pearl barley which takes 10 to 12 minutes.
In another pan add coconut oil and when it’s hot add the curry leaves, mustard seeds and cumin seeds. When seeds begin to pop add the onions, ginger, garlic, and jalapeno. Sauté until its golden brown. Add the turmeric, coriander powder, and cumin powder. Sauté for 1 minute. Add 1 cup of water. Add the eggplant and cook for around 7 to 10 minutes or until eggplant is done. Add the corn and cilantro.

I love pearl barley when the weather gets cold. This is a great Southern Indian dish.
