Ingredients

  • 1 cup  pumpkin
  • 1 carton veggie chicken broth
  • 2 cups  coconut milk
  • 1 medium diced onion
  • 3 cloves garlic
  • 1 tablespoon curry powder
  • 1 teaspoon cumin powder
  • 1 teaspoon nutmeg
  • 1 tablespoon tamari
  • 1 tablespoon olive oil

Instructions

Sauté onions and garlic in olive oil. Add the rest of ingredients. Use a whisk and mix until pumpkin and the coconut milk is blended smoothly. Bring to a boil and simmer for around 7 minutes.
