Ingredients

Ingredients

  • 8 oz chorizo
  • 1 teaspoon olive oil
  • 1/2 medium onion
  • 3 cloves garlic
  • 1 medium potatoes
  • 1/4 cup spinach 
  • 1 dash salt
  • 1/2 whole jalapeno pepper

Instructions

Heat up pan with water and potatoes. Bring to a boil and then simmer for around 10 minutes or until potatoes are cooked. Take off burner and strain. Set aside
Heat up skillet. When skillet is hot add the olive oil. Sauté the onions, jalapeno pepper and garlic until they are golden brown. Add the chorizo and cook until done. Add the potatoes and sauté for a few minutes. Garnish with fresh spinach.
