Ingredients

Ingredients

  • 4 sprouted corn tortilla
  • 1/4 cup spinach
  • 2 breast chicken
  • 1 teaspoons Berbere 
  • 1 tablespoon olive oil
 

Instructions

Make berbere or use store bought. I make mine. It keeps a long time.

Dice the chicken breast into strips.
Heat up pan. When pan is hot add the olive oil and the Berbere. With a spoon smash the berbere until it ’s smooth. Sauté the chicken until done. When chicken is done add the spinach.
 
Set mixture aside.
Heat up skillet. Place a little olive oil in pan. When olive oil is hot dip the tortillas in the pan for a few seconds until the tortilla can fold in half. Usually takes a few seconds.
Spoon mixture over the sprouted corn tortillas and fold in half.
 
 

Comments

This is a great combination of Ethiopian and Mexican cuisine. The berbere, spinach and chicken make a great taco.
