Ingredients

  • 4 sprouted corn tortilla
  • 1/2 medium diced onion
  • 2 large corn on the cob
  • 1 medium tomato
  • 1 whole avocado
  • 1 tablespoon olive oil
  • 1 teaspoons Berbere 
 

Instructions

Make berbere or use store bought. I make mine. It keeps a long time.

I use organic corn on the cob if you can find it. With a knife cut the corn off the cob and set aside.
Heat up pan. When pan is hot add the olive oil and the Berbere. With a spoon smash the berbere until it’s smooth. Add the diced onions and cook until done.
 
Add the fresh corn and tomatoes.
 
Cook for around 3 to 5 minutes.
 
Set mixture aside.
Heat up skillet. Place a little olive oil in pan. When olive oil is hot dip the tortillas in the pan for a few seconds until the tortilla can fold in half. Usually takes a few seconds.
Spoon mixture over the sprouted corn tortillas and fold in half. Garnish with diced tomatoes.

I love when I can get fresh organic corn. This is a great taco. It’s simple and full of flavor.
