Ingredients
Ingredients
- 4 large potatoes
- 1 cup Broccoli
- 3 cloves garlic
- 1 teaspoon salt
- 1 teaspoon black pepper
- 1 teaspoon paprika
- 1/2 cup milk
- 1/2 cup parmesan Cheese
- 1 tablespoon butter
Instructions
Pre heat oven to 425.
Wash the potatoes and place on oven rack. Place the garlic on a cookie sheet. Bake the potatoes for 1 hour or until done.
Bake the garlic for 30 minutes.
In the meantime sauté the broccoli in olive oil until done. Set aside.
When potatoes are done take out of oven, gently scoop out the potatoes into a bowl. Be careful not to break the skin of the potatoes.
Add the butter, milk and species to the bowl. With a potato masher mash the potatoes until they are the consistency of mash potatoes. You may need a little more milk.
Add the broccoli and mix.
Spoon the potato mixture back unto the potato skins. Garnish with the parmesan cheese and bake for another 5 minutes or until the cheese is melted and golden brown.

I don’t eat a lot of potatoes these days but this is a great way to serve them.
