Ingredients
Ingredients
- 1 cup half and half milk
- 1 cup Leeks
- 1 cup cauliflower
- 1/8 teaspoon saffron
- 1 fl oz Chardonnay | Chardonnay wine
- 1 dash Salt
- 1 teaspoon black pepper
- 1/2 tablespoon butter
- 1 teaspoon olive oil
Toppings
- 3 corn tortillas
- 1 teaspoon curry powder
- 1 dash salt
Instructions
Melt the butter. Add the olive oil. Cut up the cauliflower and the leeks. Sauté until they are tender. Add the wine and the spices. Add the cream and cook for around 10 minutes at low heat.
Add mixture to blender. Blend until smooth.
Cut up the corn tortillas into strips. Sauté in olive oil. Add the salt and curry powder. You only need a little oil.
Ladle soup into bowls. Add the corn tortillas for the garnish.
Comments
This is a quick and easy dish to make. The combination of the wine and saffron gives a great flavor to the soup.
