Ingredients

  • 1 tablespoon olive oil
  • 1 medium onion  chopped fine
  • 3 cloves garlic
  • 1 cups basmati rice
  • 2 cups chicken stock
  • 1 medium diced fresh tomato
  • 1/4 teaspoon saffron
  • 28 large olives
  • dash of salt
 

Instructions

Sauté in olive oil the onions, garlic and tomato until they are golden brown.
Add the rice and cook for a few minutes until the grains turn a little brown.
Add stock of your choice and add the spices and cook until rice is done usually about 20 minutes. When rice is done add the olives and fluff the rice with a fork.

Comments

This is a different spin on this dish using Basmati rice. I first has Spanish rice around when I was 5 years old. I love my version. It’s more healthy.
