Ingredients

 
Dough
 
  • 2 cups Corn flour, masa, enriched, yellow
  • 1/2 cup butter
  • 1 1/2 cups chicken broth 
  • 1 half  teaspoon baking powder
  • dash of salt
 
Filing
 
  • 1 large diced zucchini
  • 1 medium onion
  • 1 clove garlic
  • 1 whole jalapeno pepper
  • 1 medium tomatoes
  • 12 large green olives
  • 10 whole corn husks
  • dash of salt
  • 1 tablespoon olive oil
  • 1/4 cup water
  • 1/4 teaspoon saffron
  • 1/4 cup grated cheddar cheese
 
 
 

Instructions

In sauce pan add the water. Boil. When water boils add the saffron. Take of heat.
 
Sauté in olive oil the diced onions and garlic. Add the zucchini, tomatoes, jalapeno pepper and salt. Add the olives and saffron water. Add the grated cheese and mix well. When everything is cooked take off burner.
 
Soak the corn husks in a bowl of warm water.
In a large bowl, beat the butter until fluffy. Combine the masa harina, baking powder and salt; stir into the butter mixture, adding more chicken broth as necessary to form spongy dough.
 
Spread the dough out over the corn husks to 1/4 to 1/2 inch thickness. Place one tablespoon of the meat filling into the center. Fold the sides of the husks in toward the center and place in a steamer. Tie string around the tamales to ensure the filling doesn’t come out.
 
Steam for 45 minutes.

I used to make this during the Christmas season. Our family loves tamales. I had my first tamale when I was probably 5 years old. My grandparents live in Santa Barbara and we would go pick up homemade tamales from a store that specializes in tamales. I have love them ever since. This is a healthy version. It does not contain any lard.
