Ethiopian Chinese egg roll

Ingredients

  • 1 large potato
  • 1/4 cup water
  • 3 teaspoons berbere
  • 2 cups cabbage
  • 1 tablespoon olive oil
  • 5 whole egg-roll wrappers
  • salt to taste
Sauce
  • 2 teaspoons tamari
  • 2 teaspoons sesame oil
  • 2 teaspoons murin or rice vinegar
  • 1 tablespoon pickled ginger

Instructions

Pre heat oven to 375
 
Heat up skillet. Add olive oil. When oil is hot add berbere and mix into the oil. Add your potatoes and cabbage. Add 1/4 cup water. Cook for around 10 minutes. Add salt to taste.
Divide you mixture into fifths.
Put 1/5 of your mixture on the egg roll wrapper and roll it up tightly. It should look like a big cigar.
 
Roll up the other 4 ones.
Place on cookie sheet and bake for 20 minutes or egg rolls are golden brown.
To make sauce mix all ingredients together. Use as a dipping sauce.
