Spanish asparagus omelet

Ingredients

  • 6 spears asparagus
  • 1 teaspoon olive oil
  • 1/4 tablespoon butter
  • 8 tablespoons romesco sauce
 
Omelet
  • 4 medium eggs
  • 1/4 cup milk
  • 1 dash salt
  • 1/8 tablespoon paprika
  • 1 tablespoon ghee

 

Instructions

Beat with fork your eggs until blended. Beat in the milk and spices.
Heat up omelet pan. When ghee is hot add the eggs mixture. Cook on low heat. When cooking stick the eggs mixture with a fork to allow the eggs to cook properly. When it is all the same consistency the omelet is done.
Spread a layer of the Romesco sauce on the omelet and 6 asparagus spears.
Fold Omelet in half and serve.
