Ingredients
- 6 medium eggs
- 1/12 cup tamarinds
- 1 tablespoon coconut oil
- 1 teaspoon cinnamon
- 7 leaves curry leaves
- 1 teaspoon fenugreek seed
- 1 teaspoon cumin seeds
- 1 teaspoon fennel seed
- salt to taste
- 1/4 tablespoon urad dahl
- 1 medium diced onion
- 1 whole diced jalapeno pepper
- 3 cloves garlic
- 1 teaspoon turmeric
- 1 teaspoon fresh ginger
- 1 medium diced tomato
- 1/2 cup coconut milk
- 1/2 cup water
Instructions
Add eggs to pan. Add water to cover eggs.
Bring water to a boil. When water starts to boil turn down heat and simmer for 10 minutes. Turn off heat and set aside.
Heat up pan. When pan is hot add the coconut oil. Add the cumin seeds, fenugreek seeds, fennel seeds, urad dahl and curry leaves. When the seeds are toasted add the onion, jalapeno, tomatoes, fresh ginger and garlic. Sauté until mixture is golden brown. Add the turmeric, water, coconut milk and tamarind paste. Cook for 5 minutes.
Peel the eggs and cut the eggs in thirds. Add to the sauce. Stir and cook for another 3 minutes.
