Oats Upma with eggplant

Ingredients
- 1 cup oats
- 1 medium onion diced fine
- 3 cloves garlic diced
- 1 teaspoon diced fine fresh ginger
- 1/2 whole Thai chile pepper diced fine
- 2 cups diced eggplant
- 1 1/2 tsp olive oil
- 1 teaspoon mustard seeds
- 1/8 tablespoon urad dal
- 3 curry leaves (optional)
- 1 teaspoon turmeric powder
- 1 teaspoon coriander powder
- 1 teaspoon cumin powder
- 1/2 whole fresh Lemon juice
- 10 sprigs coriander leaves (garnish)
- dash of salt
Instructions
Heat up pot. Add your oil. When oil is hot add your mustard seeds and urad dahl. When the seeds begin to pop add your garlic, onions, fresh ginger, curry leaves, eggplant and green chilies. When mixture is golden brown add your spices and sauté for 1 minute. Add your oats and stir constantly for a few minutes. You don’t want to burn the mixture. Add 2 cups water. Stir constantly until the oats are cooked. Add you juiced lemon and salt. Garnish with fresh coriander leaves.

My Indian friends at work introduced me to this recipe. I added eggplant to this dish. Its oats cooked Indian style. It’s great for breakfast. This is probably one of the most nutritious breakfast you can have.
