Ingredients
- 6 medium eggs
- 3 cloves garlic
- 1 medium diced onion
- 1/2 whole diced jalapeno Pepper
- 1 tablespoon ghee
- 1 medium diced tomatoes
- 1 teaspoon mustard seeds
- 1 teaspoon turmeric
- 1 teaspoon coriander powder
- 1 large zucchini
- dash of salt
- 10 sprigs fresh cilantro diced fine
- 1 teaspoon diced fine fresh ginger
Instructions
Beat eggs Set aside bowl
Heat up skillet Add the ghee. When ghee is hot add your mustard seeds When mustard seeds pop add you onion, garlic, zucchini, tomatoes, ginger and jalapenos. Sauté until golden brown.
Add turmeric, coriander powder, salt and chili paste to eggs mixture. Whisk. Add egg mixture to skillet and stir constantly until eggs are scrambled. Garnish with fresh cilantro.
