Ingredients

Ingredients

  • 1 tsp, ground oregano
  • 1/2 large potato
  • 1 tablespoon olive oil
  • 1 tbsp, chopped fresh Basil | basil leaves
  • 1/4 cup onion
  • 1 clove garlic
  • 1 tsp, whole star anise | 5 star anise
  • pinch of salt
 

Eggs

  • 4 large eggs
  • 1 tsp red pepper flakes
  • 1 tablespoon olive oil

Corn tortillia

 
  • 2 tortilla corn tortillas
 
 
 
 
 

Garnish

  • 1 cup alfalfa sprouts
  • 1 tbsp Soy sauce |tamari

Instructions

Dice the potatoes. Steam them for around 10 minutes until tender. 
Sauté  in olive oil the onions and garlic. Add the potatoes and the rest of the spices. Sauté  for another few minutes.
 
 
In separate  pan heat up the olive oil with the red peppers. When oil is hot add the eggs and cook them with a lid for around 5 minutes. Fry the eggs to your specific taste.
 
 
Heat up two corn tortillas. Place the potato mixture over the corn tortillia. Place the eggs over the potatoes. Garnish with the sprouts. Add the tamrari or soy sauce over the sprouts. 

Comments

This is a very nutritious breakfast. It has a different spice combination. I love the different flavors of the dish.
